おこのみやき is a savoury pancake in Japan. The word おこのみやき is made of 2 parts – おこのみ (one’s preference) and やき (fry, cook), so it is like a “pancake as you like.”
おこのみやき is very popular in the Kansai (especially Osaka) and the Hiroshima areas but available throughout Japan. Ingredients and methods of cooking vary from region to region – some people mix all the ingredients together first and cook it while others carefully construct layers as they cook.
The “must” ingredients are flour and shredded cabbage but the rest is all up to you as it is in the end “as you like”. Most people will use eggs in the batter and put some kind of meat or seafood. My favourite is thinly sliced pork belly, squid and prawns. If I can I put tempura crumbs in the batter to make it fluffy and tasty.
In many Okonomiyaki restaurants, customers will be given prepared ingredients and they are to cook it by themselves on the hotplate embedded in the table.
After it’s cooked, you put special “okonomiyaki sauce” (similar to Worcestershire sauce but much thicker) and/or mayonnaise and dress it with bonito flakes and “aonori” seaweed flakes. It is tasty and healthy.
